扬州大学旅游烹饪学院导师介绍:杨振泉


  杨振泉,男,1975年7月生,博士,副教授,硕士生导师,食品科学与工程系教工党支部书记,江苏省“青蓝工程”培养对象,国家食品药品局餐饮服务食品安全专家。
  主要从事食品安全检测与有害生物因子控制、食品微生物功能发掘及应用以及农产品贮藏与保鲜技术研究,曾在美国北卡罗莱纳州立大学 (NCSU)和新加坡国立大学(NUS)从事合作研究与学术访问。
  先后主持国家自然科学基金、江苏省自然科学基金、863项目子课题以及江苏省高校自然科 学基金等研究项目,指导大学生科技创新基金2项。先后参加了国家重大科技攻关项目乳品加工关键技术及设备的研究与产业化开发,副溶血弧菌流行菌群的分子特 征及控制因素研究,机能性乳酸菌的筛选与分子标记,乳酸菌胞外多糖产生特性及对酸奶功能特性的影响以及调节血脂降血压功能益生菌定向筛选与应用关键技术等 项目研究。
  先后在《Food Microbiology》、《International Journal of Food microbiology》、《Food Control》、《微生物学报》、《遗传学报》等国内外期刊发表研究论文40余篇,其中SCI收录11篇,获得国家发明专利3项,编写十一五精品课程建 设教材2部。2007年获得江苏省科技进步三等奖,2011年获得江苏省科技进步二等奖,江苏省优秀博士学位论文获得者。
  主讲《食品免疫学》、《食品卫生 检验检疫技术》以及《食品毒理学》等课程。
